I know most brokers are closed over the weekend… but there are still transactions done over the weekend which is why there is a gap when the market opens up again (sunday).
I was wondering if anyone knew a website/place where I can watch the live charts of the CURRENT price of a pair - so I would know ahead of time if there is a possibility that a gap will happen.

The existance of a gap when the market opens is not indicative of trading happening over the weekend. It’s indicative of the market making an adjustment based on weekend developments.

You can try Oanda. They actually allow weekend trading, but the spreads are very wide so it’s not recommended.
