Why does the price change from Friday close to Monday open? Who’s moving the prices?

Trading generally starts at about 5pm EST on Sunday afternoon.
Time zones mess with each other, cos it is already tomorrow for the ausies so i think they give some trading time on the Sunday cos it Monday down under at the same time
