No dealing desk brokers do not pass their client’s orders through a dealing desk, this means they do not take the other side of their client’s trade as they simply link two parties together. Does that mean they do not create market on their own?

No dealing desk broker is always preferable because trades are pass directly to liquidity providers and so there is less manipulation of quotes by brokers.
It is exactly what smart4 has said above. Never trade through a dealing desk. Firsly there is a delay in order execution and then possibility of manipulation. I faced a few issues regarding this because of which I shifted my broker.
