At what point do one consider opening a demo account, is it after the end of course or while still learning?

Theres no right answer. But my advice is complete the course then open a demo. Demo is free so you wont lose anything.

Anytime really, to start with just watch the charts without trying to trade to get a feel of marking and how price moves to give a idea prior to trading
Both ways would be fine.
If you think you are getting a good grip of concepts then no harm in demo trading side by side. Else you can always finish the course first and then start demo trading.
Either ways there isn’t any money involved, so do whatever you feel is appropriate.

Start demo trading as soon as you have a simple strategy and understand how it works. Get on with it!

The process of trading with the DEMO accounts will take time as you will need to learn and also adapt to the trading in the Forex markets along with the Profits and Loss.
